In the mouth, flavors of tannic black tea emerge quickly then meld with the abundant spice for a rich, full, nuanced brew that is at once traditional and accessible. Masala Chai is fantastic straight, sweetened, with milk, or with both milk and sugar. Brew for slightly less time if you intend to drink it straight. For an indulgent Delhi-style masala chai experience, boil the blend for up to 30 minutes in milk, water and plenty of sugar.
