This limited-quantity, light-steamed sencha from the Shizuoka region of Japan was plucked in the spring of 2009. Also known as “shincha” or “new tea,” Rare Japanese spring-plucked teas such as this one are noted for their sweet, umami-rich flavor and exceptional quality. Its needle-like, pine-colored leaves yield a lightly cloudy gold-green infusion with aromas of broth, brine, raw almonds, roasted hazelnuts, steamed baby spinach and toasted nori. The flavor balances sweet and savory, much like sautéed kale with caramelized onions. It is very smooth, with almond skin nuttiness, and is less oceanic in flavor than many senchas. The mouthfeel is soft and persistent. The finish is moist and mild, with notes of steamed green vegetables and almonds.
